Baking is so much fun, especially around the holidays! I personally love baking and it is one of my favorite things. Here are some of my favorite Christmas themed recipes!

White Chocolate Dipped Peppermint Sugar Cookies

What You’re Gonna Need:

  • 1 bag of Betty Crocker sugar cookie mix
  • 1 stick of softened (not melted) butter
  • 1 egg
  • Peppermint extract
  • 2 ½ cups of white chocolate chips
  • 2 ½ cups tbsp of shortening
  • ⅓ cup of peppermint bits or finely crushed candy canes

Instructions for the Cookies:

  1. Preheat the oven to 375 degrees
  2. Stir cookie mix, butter, the egg, and a drop or two of peppermint extract together in a medium sized bowl until the dough is soft and not gritty
  3. Take a small piece of dough and roll it in your hands to make a ball
  4. Place the balled dough 2 inches apart on a baking sheet with foil layed down
  5. Bake for 7 to 9 minutes or until they are a light gold color
  6. After taking them out of the oven, let them cool for several minutes

Instructions for the Coating:

  1. Put the chocolate chips and shortening in a microwave safe bowl
  2. Place in the microwave in 20 second intervals and stir between intervals until it’s melted and smooth
  3. Once the cookies are cool, dip half of the cookie in the coating and let the excess drip off
  4. Transfer the cookies to wax paper and sprinkle the peppermint bits immediately after placing on the wax paper
  5. Let it set at room temperature or in the fridge
  6. Once they’re set, put in an airtight container and leave it at room temperature and enjoy!

Christmas Muddy Buddies

What You’re Gonna Need:

  • 8 cups of Chex cereal, divided equally
  • ½ cup of creamy peanut butter, divided equally
  • 1 tbsp of vegetable oil, divided equally
  • 1 cup of red candy melts
  • 1 cup of green candy melts
  • 2 cups of powdered sugar, divided equally
  • 2 one gallon ziplock bags
  • 1 ½ cups of Holiday M&M’s

Instructions:

  1. Put the 1 cup of red candy melts, ¼ cup of peanut butter, and ½ vegetable oil in a microwave-safe bowl and microwave on high for 30 seconds. Stir and cook in 15 second intervals until it is smooth and melted
  2. Pour 4 cups of Chex cereal in a large bowl. Pour the red melted peanut butter and candy mix over the cereal and quickly stir to coat it
  3. In a gallon ziploc bag, pour the 1 cup of powdered sugar. Then pour the coated cereal into the gallon bag. Seal the bag tight and shake the bag until it’s coated
  4. Pour it out onto a cookie sheet lined with parchment paper to cool.
  5. Repeat this process, but with the green candy melts
  6. Once both the red and green muddy buddies are cool, sprinkle the Holiday M&M’s over the top and stir it all to combine everything
  7. Store in an airtight container for up to a week or just eat it all right then and there (I have to hold myself back)

How to Spice Up Your Hot Cocoa

I know this isn’t really a recipe, but I love hot chocolate. I drink it all the time during the winter and I know that sometimes it can get a little boring. Here are some fun things to add to your hot cocoa!

  • Add 1 tsp of peppermint extract or just stick a candy cane in to stir with instead of a spoon
  • Add about ¼ of a cup of creamy peanut butter
  • If you love Pumpkin Spice, you can add 1 tsp of maple syrup and ½ a tsp of pumpkin pie spice
  • Add 2 tbsp of Nutella and a pinch of salt
  • Add about 3 tbsp of caramel sauce
  • And to top it all off, add some marshmallows and whipped cream. You can even sprinkle a little bit of cinnamon or nutmeg over top!
